I love salad. Sometimes though I get tired of the regular tomato, cucumber and lettuce variety. It’s nice to change things up and liven up the taste buds.
Today I thought it might be nice to share 3 of my favourite summer salads this year. They are so simple to make, all with fresh ingredients and all super delicious. The best part, they are all healthy and perfect for any workout diet.
Salad # 1 – Caprese Salad
I bet you’ve had this before. I like to buy fresh tomatoes – ideal if they are locally grown. I add a small slice of mozzarella cheese on top. I garnish with some chopped basil (again fresh preferred). Top it with a little sea salt. Grind some fresh pepper on top and drizzle lightly with olive oil.
Salad # 2 – Cantaloupe, Arugula and Prosciutto
This one I discovered while in France last summer. It is so light and wonderful. Seriously a sure fire hit with the family. Start by decorating your plate with a few pieces of washed arugula. Next add some slices of cantaloupe. Place a piece of prosciutto on top or however you want to decorate. Drizzle with lemon juice and olive oil. Add a dash of sea salt and fresh ground pepper.
Salad # 3 – Tomato and Cilantro Salad
Cilantro has got to be one of my ALL TIME FAVOURITES spices. I love the taste, I love the smell, I seriously can’t get enough of it. Friends of ours introduced us to this recipe many moons ago and we just fell in love with it. (Thanks P & L. I couldn’t remember everything you put in it – so I just made up what I could remember. It still tastes great.)
Cut up fresh tomatoes into decent size chunks, add some fresh chopped cilantro. Again, some sea salt and fresh pepper do wonders. I like to add a little finely chopped garlic, some fresh lemon juice and a little olive oil. This is amazing as a side on its own. This salad can be used as a salsa. TO.DIE.FOR.
