Red Velvet Cake….and Beets

I‘ve been craving red velvet cake for some reason. This must have something to do with the red velvet cheesecake I ate at our neighbours house a week or so ago.

Anyhow, I’ve been re-thinking how we eat and decided I was going to try making said cake with beets. Yes – you heard it – BEETS.

I found some random recipe online. The pictures looked awesome. Plus, I was really looking for an excuse to use my Bundt pan again. I’m obsessed with this cake pan.

So I went out and bought the supplies. I had the Husband peel the beets for me. I didn’t want to ruin my freshly painted nails, nor did I want my hands dyed red. He doesn’t care that much. So I sacrificed his hands.

I roasted the beets for about 30 minutes to soften them up. I pureed them in my food processor with eggs, milk, cocoa powder and some other baking necessities to get the cake to rise.

I cooked the cake and then totally ruined the healthy-ness of it by slathering it with icing. The Husband suggested I decorate it with coconut flakes and sprinkle with cocoa powder. It’s really pretty.

That night after dinner, I fed the beet cake to the kids.

The kids dug in and started devouring it…UNTIL…they got a chunk of un-pureed beets in their mouths. I wish my camera had been ready. Their reaction was PRICELESS.

They both started spitting the cake out of their mouths onto their plates, yelling BLAH, BLAH. This is disgusting! I find this very FUNNY. So funny, I’m laughing as I type this :)

Clearly, this recipe needs some finessing. The best part – the store bought icing. Oh well, it was worth a try and a good laugh. I’m such a mean mom:)

You are your father’s daughter … I don’t think Ryan ever got over the time your Dad told him the olives were grapes :(

“chunk” of un-pureed beet? Damn, it was like half the beet! I am just glad the kids got that nasty part! Next time I will peel and puree :)
